An iconic dish of English "gastronomy", lamb with mint probably has its roots in medieval cuisine, at a time when herb-based preparations were very common.
This type of sauce was found in France, but also in Italy and of course in England.
Queen Elizabeth I contributed to associating this sauce with lamb.
In order to preserve the livestock to produce wool, she decreed that the lamb could only be eaten with bitter herbs (including mint).
The recipe then spread and became a classic of English gastronomy.
To make the "mint sauce", it is better to use peppermint.
We find, thanks to the colonists, this recipe in other countries including New Zealand, famous for the breeding of sheep.
mint sauce recipe
Ingredients :
1 nice bunch of peppermint
50g of sugar
10 cl of vinegar
½ lemon juice
Chop the mint
Bring the vinegar to a boil and add the sugar
Off the heat, add the mint and lemon juice
