Running a restaurant with expired ingredients can be perfectly okay according to Markaryd municipality's food inspector Helena Axelsson.

As long as you follow certain rules.

  • Goods whose expiration date has expired may not be used.

    However, you can use goods whose best before date has expired.

  • Surplus food may be donated by suppliers.

    Waste products, however, may not be donated.

  • The restaurant must comply with the requirements of food law.

    This means that temperatures must be maintained and the goods must be kept fresh.

According to Markaryd Municipality's food inspector Helena Axelsson, Restaurant Perrongen follows these requirements, and therefore it can be run without problems.

Do restaurants have no obligation to inform guests if the food is prepared with this type of raw material?

- No, there is no such obligation.

However, sellers have an obligation to notify buyers if an item has a short date, for example.

But if the same product were to be cooked, there is no obligation to provide information.

Despite this, Restaurant Perrongen always informs if the menu is prepared with expired items.

- It is always on the menu so that guests know about it.

I think it's good to inform about it, says kitchen manager Carolina Borgstedt.
