King Louis XIV had many favorites, including Madame de Maintenon and Madame de Champvallon.

The latter sought by all means to attract the good graces of the Sun King... Warned that her beloved was fond of chops, Madame de Maintenon had them prepared en papillote, decorated with béchamel, mushrooms and truffles. .

Her rival had another idea, that of serving them with potatoes and onions (there is some doubt about the use of potatoes which, at the time, was not common).

The story says that this recipe would still have allowed Madame de Champvallon to lure the king into her bed for a few nights...

This recipe then becomes a common dish.

The housewives who prepare it and do not have an oven at the time use that of the baker, after his batches.

Thanks to the residual heat, you get the perfect cooking, just enough time to go shopping!

The recipe for Champvallon cutlets (for 4 people):

Ingredients :

- 12 lamb chops


- 800 gr of potatoes


- 2 large onions


- 2 cloves of garlic


- Butter


- ½ liter of vegetable or poultry stock


- Salt / pepper


- Thyme / bay leaf


1. Brown the chops in a pan with a little fat, set them aside

2. Cut the potatoes and onions into rings and brown them in the same pan

3. Butter a gratin dish and rub it with the garlic cloves

4. Arrange a layer of potatoes and onions in the bottom of the dish, lay the chops and cover with potatoes

5. Pour in the broth, add the thyme and the bay leaf

6. Salt and pepper

7. Bake for 1 hour in an oven at 180°C
