On Tuesday, the Michelin guide awarded its stars to Cognac, after two years of postponement.

Forty-one restaurants won their very first star this year.

Among them, the Parisian restaurant FIEF, for Fait Ici En France, which also received the prize for young chef of the year.

The annual Michelin star ceremony in Cognac has paid off for the restaurant FIEF (Fait Ici En France), located in the 11th arrondissement of Paris.

The ecological restaurant won its very first star and its chef, Victor Mercier, also left with the 2022 young chef trophy.

"It's really crazy"

In Paris, his entire team had gathered at the restaurant, closed for the occasion, in order to follow the ceremony live.

"We knew there would be too much emotion today to work, so we chose to close," explained Maria, chef de partie at FIEF.

That didn't stop the phone from ringing all evening after the announcement.

“We have a lot of reservations coming in,” said Damien, the hotel manager.

"We also receive congratulations from our suppliers who are delighted to see that their products allow us to reach this level."

The restaurant's chef, Victor Mercier, also expressed his emotion on the phone with his team.

"I couldn't believe it, it's really crazy," he said before warmly thanking his colleagues.

"We are really very proud of him, it's incredible to live such an important moment for the restaurant", added Eugénie, also chef de partie.

The objective of the FIEF is now to defend this first star with their new customers.
