This delicious dish is one of the great specialties of Thai cuisine.

The crying tiger is an easy and very tasty recipe whose exact origin is not known, but which illustrates all the subtlety of Thai cuisine.

In France, it is probably to the Thiou restaurant, one of the most famous Thai restaurants in the capital, that we owe the fame of this dish.

A delicious piece of fillet or sirloin marinated, then grilled.


Several stories circulate about his name:

  • The tiger is crying because the pieces of meat needed for the dish are not accessible, as they are protected by the animal's ribs

  • The tiger is crying because of the spices in the dish

  • The tiger cries because when we have eaten this part of the beef, the other pieces are less good

The secret of the crying tiger is the use of tamarind in the sauce!

The crying tiger recipe

Ingredients :

  • 600 gr of sirloin of beef

  • 6 tbsp.

    oyster sauce

  • 4 tbsp.

    at s.

    soy sauce

  • a branch of lemongrass

  • 1 clove of garlic

  • coriander

  • pepper

  • chive

For the sauce:

  • 1 C.

    tamarind juice

  • 1 lime juice

  • A few chopped mint leaves

  • A few chopped coriander leaves

  • 1 finely chopped red pepper

  • 1 shallot

  • 2 tbsp.

    nuoc nam sauce

  • Prepare the marinade with the oyster sauce, soy sauce, lemongrass, coriander, chopped garlic and chives

  • Brush the meat and film it

  • Leave to infuse for 3 hours in the fridge

  • Mix all the ingredients for the sauce

  • Quickly sear the meat in a very hot non-stick pan

  • Cut the meat into strips and pour the sauce
