This is undoubtedly one of the most unique wines in the world!

A unique nectar, produced only in a small region thanks to the combination of a particular grape variety, Savagnin, and a so-called “sous veil” breeding method.

By not filling the barrels during the 6 years of ageing, part of the wine evaporates (the angels' share) and a veil of yeast forms on top. 

It protects the wine from the acetic sting, thus preventing it from becoming vinegar.

It is this alchemy that gives yellow wine its unique taste characteristics, with notes of nuts, dried fruits and curry.

We do not know the precise origin of yellow wine, a legend mentions a forgotten barrel in an abbey… It is associated with the abbesses of Château-Chalon whose abbey was founded in the 7th century.

Louis Pasteur, originally from Arbois, was very interested in yellow wine and carried out a series of studies on fermentation.

Another particularity, the yellow wine has been bottled in a 62 cl clavelin since the 18th century.

Yellow wines can be produced in 4 appellations: Arbois, Château-Chalon, L'Étoile and Côtes du Jura.

The name "yellow wine" appeared in the 19th century.
