“New house”, this will be the name of the restaurant that Philippe Etchebest will soon open on the Place des Chartrons, as indicated in a publication on his Instagram account.
A name that refers to the family name of the famous chef since the Basque etymology of Etchebest comes from the fusion of the words etxe and beste meaning the other house, in the sense of news.
He explained Friday on the set of TV7 that the concept would be "to receive people like at home" without a restaurant facade identifying the place for example.
He also specified that there would be references to its history in this new place, the opening date of which is still not known.
He promises “top-quality cuisine”.
A dispute over the building permit for this project caused a significant delay.
