The Belgians and the inhabitants of the North know it well ... Popularized by the Tuche, samurai sauce is one of the essentials of "fritekot" or stalls for chips.

This mayonnaise that stings that stings that stings is not, as its name might suggest, born in Japan, but in Belgium, with an Indonesian inspiration.

A sauce, unfortunately very often industrial, which is inspired by Algerian sauce (which is not originally from Algeria and which contains onions and harissa).

The latter would have been invented by Nawhal's, an industrial brand of sauce.

But back to the samurai sauce: mayonnaise / ketchup and sambal oelek.

Sambal oelek (spicy mortar sauce) is a paste of hot peppers with a touch of sugar, salt and vinegar (you can buy it ready-made).

The samurai sauce recipe:


Ingredients:

- 1 egg yolk


- 1 tsp.

to c.

mustard


- 1 dash of lemon juice


- Grapeseed oil


- 1 tbsp.

to c.

tomato paste


- 1 pinch of sambal oelek
