In one year (from February 2020 to February 2021), the hotel and catering sector lost 237,000 employees. 100,000 jobs would need to be filled in the kitchen and in the dining room. In the Table des bons vivant on Saturday, Laurent Mariotte and his columnists Yves Camdeborde and Charlotte Langrand are interested in the labor shortage in the sector. The critic Jean-Luc Petitrenaud for his part will praise the trades of the room, and the whole team will try to understand the origins of the crisis, before reviewing the possible solutions.
