There is actually no real answer, because this dish was undoubtedly born long before present-day countries.

Chef Abdel Alaoui looks back on the history of this dish and its many variations: “In my family, there are at least 400. I have forty aunts and each has their couscous.

So it's complicated to count and know how many different couscous there are.
