Rather golden or not overcooked?

If your baking tastes are as sharp as those of a starred chef, know that the City of Paris is organizing a draw to select the 6 Parisians who will join the jury for the best baguette in Paris 2021. The opportunity to judge the Grail of French kitchen tables on its taste, its cooking, its crumb but also its appearance and its honeycomb.

Registrations are made until September 3 at 5 p.m. via a form, for an election set for Friday September 24.

Last year, it was Taieb Sahal, head baker of the flavors of Pierre Demours, located in the 17th arrondissement, who won the title of the best baguette in Paris.

A calibration between 55 and 70 cm long

At his side, Olivia Polski, deputy mayor of Paris in charge of trade, crafts, liberal and independent professions as well as representatives of professional federations, but also the president of the Syndicat des Boulangers du Grand Paris.

All of this will make up part of the jury for the 2021 edition.

As for baguettes, they must respect a very precise calibration: between 55 and 70 centimeters in length, for a weight of between 250 and 300 grams, and a salt content of 18 g per kilo of flour.
