Everyone has been in this situation before: preparing a meal for friends who arrive unexpectedly.

While taking care to choose seasonal products that bloom well in summer.

The essential and effective pasta salad

For Charlotte Langrand, efficiency rhymes with dough.

"If the friends arrive unexpectedly, I draw the dough salad", explains the columnist.

"Often, I opt for penne that I mix with ginger, lemon, Parmesan and olive oil. I like to put lots of herbs too to season."

And for the most greedy, nothing forbids you to add ham or pieces of chicken for more consistency.

Another tip from our columnist: get the guests to contribute.

"In these moments, suddenly, we make rolls of ricotta and bresaola with arugula."

Eggplant caviar for chic

If like Olivier Poels, you always have a bunch of vegetables, you can opt for an eggplant caviar for example.

"We burn the eggplant in the oven, we crush it with a fork with a little lemon juice and a little coriander" he says.

"And we spread that on country bread, we are fine."

Ham and burrata for an air of Italy

Finally for Laurent Mariotte, we are inspired by Italian cuisine by offering ham and burrata accompanied by a melon.

"These are summer essentials, a beautiful burrata and a dry ham with melon", explains Laurent Mariotte.

"You can add a drizzle of olive oil."

And if you are lucky enough to be in a region that offers ham or melon, do not hesitate to favor the short circuit by taking local products.
