A great and very fashionable New York specialty, cheesecake actually comes from much further afield.

Several centuries ago, a sour cheese cake called Vatrushka was eaten by the Jewish community in Central and Eastern Europe.

He is said to be from Poland.

It is with the immigration of these populations to the United States that he will end up there.

Finding no faisselle on site, the migrants replaced it with cream cheese.

The fashion for cheesecakes is much more recent: the 2000s.
