The salad is the queen of colors, the bride and the darling of everyone's heart, "Fattoush". To facilitate preparation, the vegetables are washed early to dry well.

Ingredients: Lettuce, one large tomato, two cucumbers, sweet green peppers and possible colors, radish, green onions, parsley, and watercress.

Method: The

herbs are roughly chopped, and the more color they are, the more nutritious and delicious.

Mix the chopped vegetables and leaves immediately before serving with a mixture of: salt, lemon juice, sour vinegar, sumac, pomegranate molasses, olive oil, basil, thyme, and dried rosemary.

For a healthy option, toast Arabic bread or tandoor with a little oil, with a pinch of salt, dry mint or thyme and sumac and sprinkle over the fattoush.

(Bread can be prepared in advance, enough for several days).

To store the fattoush for several days, it is placed in a storage box without the mixture and tomatoes, and covered with paper towels to absorb any moisture from the vegetables.

Southern tomato cumin

Chef Hegazy brings back her memories of her childhood days, when life was sweet and simple, with delicious food, including the smell of southern cumin, which is the basis of many Lebanese dishes, including fructa, lentil kibbeh, potato kibbeh and tomato kibbeh.

Tahwija (spices) Daqah kibbeh:

spice, dried rose, cumin seeds, black spice, whole red spice, and cinnamon.

Method:

Mix the ingredients of spices and kibbeh together in preparation for making several varieties, including tomato cumin.

In addition to the above tahwija, add 4 crushed tomatoes with a blender, and leave them aside to make the semolina wet, add 2 tablespoons of tomato paste, 3 tomatoes cut into cubes, 4 tablespoons olive oil, a pinch of salt, a cup of mint and finely chopped parsley, mix the ingredients Together and served with pickles, flatbread, and everything vegetarian you can think of.

After breakfast, the fasting person longs to taste delicious sweets to restore energy and vitality, which is why she chose this dish with this wonderful taste called Layali Lebanon, which is an easy recipe that suffices (4-5 people).

Ingredients: 4 cups liquid milk, 3 quarters of a cup of fine semolina (chicken flour), 3 tablespoons of sugar, 1 tablespoon of orange blossom water.
