Kitzingen (dpa / lby) - The asparagus heads are still sticking out of the ground, but local asparagus from Franconia can already be served on the plates at Easter.

“As of Monday, the first farmers will begin to prick small quantities of early asparagus varieties.

As soon as the sun shows up a lot and the ground warms up, the first kilos can be stung, ”said the chairwoman of the asparagus producers' association Franconia eV, Miriam Adel.

The asparagus is not yet harvested across the board: in Middle Franconia and Upper Franconia as well as the other Bavarian growing areas in Lower Bavaria or Upper Bavaria, early harvest is not possible due to the cold weather.

Agriculture Minister Michaela Kaniber (CSU) officially opens the asparagus season this year on April 12th in Lower Franconia.

The first harvest workers from abroad are already in Franconia or will arrive in the next few days, said Adel.

In contrast to last year, when the lockdown began at the beginning of the asparagus season, companies are better prepared this year and the hygiene concepts are coordinated with the responsible health authorities.

Foreign workers are only allowed to enter the country with a negative PCR test.

They then have to be quarantined for five days.

If a second PCR test turns out negative again, work in the field can begin.

According to the Federal Ministry of Agriculture, asparagus is the vegetable with the largest cultivation area in Germany.

In 2020, 309 farms in Bavaria grew asparagus on around 3,990 hectares.
