This pastry was born in honor of the famous eponymous cycling race.

It was created in 1909 by a pastry chef from Maison-Laffitte (on the way to the race) by Louis Durant.

It is also designed in the shape of a bicycle wheel.

The cake is actually a choux pastry garnished with a praline mousseline and garnished with slivered almonds.

Ingredients: 

- choux pastry (4 eggs, 25 cl of water, 100 gr of butter, 150 gr of flour)


- 4 egg yolks


- 150 gr of sugar


- 100 gr of praline


- 25 cl of milk


- 100 gr of cream liquid


- 100 gr of butter


- Flaked almonds - Icing

In a saucepan, put the water, the butter and add the flour

Add the eggs off the heat and dry the dough well.

Form a crown using a pastry bag, sprinkle with slivered almonds

Bake at 180 ° for 45 min

Make the cream: mix the egg yolks and the sugar

Bring the milk to a boil

Pour the egg mixture with sugar, whisking vigorously

Add the butter and the praline and mix well

Whip the whipped cream and incorporate it into the very cold mixture.
