The thermometer dips, a few snowflakes flutter in the sky and many of us are craving raclette. This melted cheese that covers potatoes in their field dress, mountain cold meats and a glass of dry white wine to accompany it all. To find the origin of this convivial dish, we have to go back to the 12th century, in the canton of Valais in Switzerland. What was then called roast cheese is the ancestor of our raclette. As today, it was about placing a piece of cheese near a heat source (the fireplace) and "scraping" the melted part off the plate. The word “raclette” dates back to 1874 when this dish was widely used in Switzerland… and beyond.
