March 1, 1586, appears the first written mention of the famous quiche at the Duke of Lorraine Charles III.

It is above all a popular dish for sharing that was made with leftover bread dough.

Cream and eggs were added to it and sometimes smoked bacon (it was smoked for storage) from the 19th century.

But no cheese!

The dish conquered all of France with the exodus of the Lorraine from 1870 (Franco-Prussian war).

Ingredients: 


- 1 shortcrust pastry (300 g of flour / 150 g of butter / 8 cl of water / salt)


- 3 eggs plus two yolks


- 200 g of bacon


- 35 cl of whole cream


- 35 cl of milk


- Salt / pepper / nutmeg

Blanch the bacon for 3 minutes in boiling water
