Fresh ginger and turmeric

Around a plate of oysters from Camargues (or open sea very iodized), the chef prepares his shots with a juice extractor.

“I put inside a piece of peeled ginger, some fresh turmeric, and I start to squeeze,” he explains.

I cut the ends of an untreated organic lemon, I remove half of the skin, trying to keep the other part for its essential oils which will give body to my juice.

I cut the lemon in four and put it in my extractor, which will clean it from the turmeric and ginger… I then fill my shot glass, I add a little chili oil, a few peppercorns.

And all you have to do is taste by alternating an oyster and a shot and accompanying it all with a little fat: salted butter, rye bread, a few sausages, if you feel like… I can tell you that it wakes up seriously!
