Surprise bread with white pudding 

If you want a more substantial starter, you can set your sights on Laurent Mariotte's surprise white pudding bread, which Olivier Poels loves.

"We make a little apple chutney", explains Olivier Poels.

"Then we add a little onions and a little vinegar. And then a white sausage that we reheat. We put everything in a baguette like a hot dog, a little passage in the oven and after, we cut in a round for the guests. "
