"Since we are in Madrid, he wants to thank both the Community and the City Council, both the mayor and the president, because I think they have taken great care of the cooks as far as possible, the maximum that could be done has been done so that we could continue developing our work and what is more important, they have given us the possibility to Madrid chefs to show that restaurants are safe places ", said chef Dabiz Muñoz during his speech after renewing his award last year, the three Michelin Guide stars, the highest award.

"Renewing the three stars is always a luxury and a responsibility," said Muñoz.

The chef from Madrid also thanked the guide for his work for leaving this year despite the difficulties.

The gala was held at the Real Casa de Correos de Madrid, where these prestigious gastronomy awards were announced in Spain and Portugal, which, on this occasion, are held in a year marked by the economic difficulties brought on by the pandemic of the Covid-19.

During her speech at the gala, President Díaz Ayuso recalled the "bad times" in which establishments have had to close "in all parts of Spain" as a result of the health crisis.

During his speech, he focused on the need to "pay tribute" to the restaurant and hotel sector;

"architects of the magic of gastronomy in Madrid".

He has reiterated that restaurants, bars and cafes are a safe place against Covid.

"There we can do something so deeply rooted in the culture of the Spanish as we always gather around a good table. For that, no place like the city of Madrid," he concluded.

Last September, the DiverXo restaurant, owned by Dabiz Muñoz, provisionally closed its doors after detecting "some cases" of positive for coronavirus in routine controls among its staff.
