Died on December 5, 1870, the famous writer left as a testament a remarkable work: the Great Dictionary of Cooking, a work he finished writing a few months before his death and which was to be published in 1873. He recounts his travels with his verve, feasts, and discusses nearly 3000 recipes.

Among these, some like elephant feet or the turtle are unlikely, but others are much more feasible like this recipe for puffed potatoes.

The recipe:


Ingredients for 4 people:


- 1 kg of mashed potatoes


- 4 eggs


- 10 cl of cream


- 2 tbsp of chopped chives


- 2 tbsp of chopped parsley


- Salt / pepper / nutmeg


Wash and cook the potatoes in a large saucepan of salted water / Separate the whites and yolks from the eggs / Whip the whites until stiff / Peel the potatoes and pass them through a vegetable mill / add the cream, the yolks and the chives / Gently add the egg whites and mix well / rectify / Make the small balls / Fry the balls in oil at 180 °.
