Today, Laurent Mariotte invites you to prepare a white sausage with chanterelles and chestnuts.

Ingredients for 4 persons) :

  • 4 white sausages

  • 300 g chanterelles

  • 150 g of chestnuts cooked sous vide

  • 25 cl of liquid cream

  • 10 cl of chicken broth

  • 1 shallot

  • 20 g of butter or a little oil

  • Salt pepper


1. Clean the mushrooms and finely chop the shallots.

2. Heat a sauté pan.

Melt the butter or oil and add the chopped shallot, white blood sausages, mushrooms and chestnuts or chestnuts.

3. Brown everything then add the cream and the stock.

Let reduce for 5 minutes.

4. Salt and pepper and serve.
