In praise of creativity, without the taste being neglected.

This was the slogan of the Coupe de France du burger, which brought together seasoned amateurs and true professionals from all over France this Monday in Paris, for its fifth edition.

At the end of a very tough competition, where the more extraordinary breads (ah! The succulent puff pastry with Bériz truffles) competed with the most unexpected flavors (oh! The thyme alcohol flambé on Marc's Casse-crûte ), the Coupe de France 2020 was finally won by Samuel Besnard's Bœuf qui “laugh”.

Its particularity: a breaded sweetbread in addition to the beef, a duxelle of mushrooms and a gribiche sauce.

The Beef who "laughs"?

So no, the Beef is not laughing, but this burger still laughs a lot with its breaded sweetbreads that rival beef in an amazing bread, soft on the inside and crispy on the outside.

Add to that a high-flying gribiche sauce, a duxelle of mushrooms, and nuts… “It was a fairly risky decision, confides the 39-year-old chef from the Landes, but that's what paid off.

Le Bœuf qui “ris” succeeds the Black OG by Vincent Boccara (2017 winner), the Childhood by Nicolas Willaume (2018) and the Chaillet by Anthony Verset, winners (2019), all three members of the 2020 jury chaired by the former Top-chef Julien Duboué.

For less than six euros

Everything was played from 9:30 am this Monday morning, at the Atelier des chefs rue de Penthièvre, in Paris.

Of the 310 candidates registered for this competition organized by the meat brand Socopa, they were only 25 preselected for the five regional finals.

Objective: to make a burger that is out of the ordinary for a “material cost” not exceeding six euros.

Its particularity: a brioche with porcini mushrooms, flowers and an alcohol flame of thyme to sublimate the whole.

Its particularity: a swirl-shaped bun's, onion chips and homemade cream.

There were only five candidates left, among the most creative and the most delicious, to compete for the national final at snack time, around 4.30 pm… "They really enjoyed each other, guys, it's good to see" exclaimed Vincent Boccara, before the jury chaired by Julien Duboué returned to award his 2020 French cup of burger to Beef qui “laughing”.

“We appreciated the originality of the burger, but above all the quality of the seasoning,” explains the president of the jury.

It was its beautiful gribiche sauce that made all the difference.
