Legend claims that the recipe would have been invented with the "funds of cupboards" by the cook of Napoleon on the evening of the victory of the emperor on the Austrian troops in Marengo.

It would actually be an old Italian recipe re-adapted.

Recipe

1kg of sautéed veal

½ liter of tomato sauce

1 glass of white wine

4 carrots

3 shallots

about ten small onions

1 clove of garlic

1 bouquet garni

2 tablespoons of flour

250 g button mushrooms

1.

 Brown and ape (flour) the pieces of veal.

 Cut the vegetables into pieces.

 Add the vegetables, the white wine, the clove of garlic, the bouquet garni, the tomato sauce and add 20 cl of water.

 Simmer for 1h30.

5.

 Add the Paris mushrooms cut in 4 and cook for another 15 min.
