The best restaurant in the world is French. The Auberge du Vieux-Puits in Fontjoncouse in Aude has been crowned by TripAdvisor. The three-star chef Gilles Goujon appreciates this unexpected recognition that comes directly from customers and not, as usual, from food critics. However, the news came as a surprise. “I didn't expect that at all,” he confirms.

"Finding myself first in the TripAdvisor ranking is of course a pleasure", explains Gilles Goujon. A success that he finds all the more incredible in view of "all the possibilities compared to the millions of restaurants that there are in the world" and all the more so because "it is completely different because there is 'is a ranking that is carried out by customers "and not by professionals. Good news, all the more pleasant as it "comes after a complicated period, which is not over, so that's very good".
For the chef, the recipe for success, which he tries to pass on to young apprentices or clerks, "is to try to have the image of what we all had at home when we were children: mom who gives the best of herself. In the kitchen it's almost a mess because there are the best friends who come and we want to do everything, give everything for them. It's called putting the little ones in the big ones and that is what I have been trying to do for 28 years in my restaurant ".
