SUMMER RECIPES - Every day, our culinary reporter Marion Sauveur offers a simple, tasty and easy to make recipe. Tuesday, she cooks us a croque-monsieur, simple to make and timeless. 

Like Bayonne ham in Bayonne or Parma ham in Parma, the place of production has given its name to the famous Paris ham. But today, there is only one craftsman who makes ham in Paris. And we find this ham under the name of "Prince of Paris". And what could be better than putting it in a good croque-monsieur? Our culinary reporter Marion Sauveur gives you her recipe for this timeless.

Ingredients :

  • 50 g butter
  • 50 g wheat flour
  • 50 cl milk
  • 8 slices of bread
  • 4 slices of ham
  • 125 g Comté or Cantal or Tomme cheese
  • Salt
  • Pepper
  • 1 pinch of grated nutmeg

The croque-monsieur recipe 

1. We start by making a béchamel. It is this creamy and delicious sauce that will bring the sweetness to the croque-monsieur. We melt butter. Flour is added to it, and when the mixture is homogeneous, it is left to cook for 2-3 minutes over medium heat. 

2. And pour the milk, little by little, without stopping to stir with a whisk. The béchamel will take on texture. We stop cooking, we dirty, we pepper, and a little grated nutmeg. And let it cool. 

3. Meanwhile, grate the cheese. We take good cheese: from the county, the cantal or the tomme. 

4. We spread the béchamel bread. Add the grated cheese. And on half of the slices: ham. 

5. Cover the ham with a slice of bread, on the béchamel-cheese side. We press it well and spread the rest of the béchamel on each croque-monsieur. 

6. Direction the hot oven (190 degrees), a dozen minutes. They must be nicely browned.

The recipe for square bread

Ingredients :

  • Prince de Paris ham 
  • 15 month county
  • Homemade béchamel cream
  • Two slices of sliced ​​bread 

Recipe :

1. Make a béchamel cream with Echiré butter, flour and milk. 

2. Toast square brown bread without coloring.

3. Put butter on one side of the bread, cover with béchamel. Place the ham and the Comté.

4.  Make the sandwich and place the other slice on top. Coat again with béchamel and Comté cheese.

5.  Put in the oven at 180 ℃ until it is very hot and well colored.
