And Jean-Jacques Bolzan, much like Audrey Pulvar in Paris, is entrusted with the vast mission of "eating well".

So, what exactly does this a priori enticing delegation consist of? "The idea is to work on this theme which is taking a prominent place in the societal expectations of the people of Toulouse and has grown during the Covid-19 crisis," replies the incumbent. The ex-Mr. Commerce remains in charge of the open air markets, of which he wants to increase the number, but also takes control of the central kitchen, in other words on the canteens of pitchouns and elders.

Without making a fixette on the organic, the elected official wants to increase "the share of home-made and local products or under quality label in the plates [currently 53%]". "It is not done with a magic wand," he concedes, "but we will place tenders which will allow local producers to supply us directly, or if they cannot, find good wholesalers. " And, in the event of price inflation for these good products, the deputy mayor wants to compensate by speeding up "the fight against food waste".

Jean-Jacques Bolzan also wants to exploit "the potential of Candie's agricultural management", 220 ha anyway, now 100% organic. Young farmers will be able to cultivate plots there to get started. "We could also organize local cooking lessons there," imagines the elected official.

An open-air rural festival

Finally, the assistant to “eating well” is responsible for transforming Toulouse, once a year, into an open-air agricultural fair by concretizing the campaign promise of a “Festival of good living and food sustainable ”. The concept ? The landing in all the places of the city of the farmers and producers of the neighboring campaigns, with their products and their animals. "Restaurateurs can also organize tastings," promises Jean-Jacques Bolzan. He announced the first edition, "either for 2021 or 2022" and wanted to organize "a consultation with traders to determine the most favorable period of the year" for this giant gastronomic market.
