In "Indispensables", Marion Sauveur has concocted the ideal menu for the summer, both gourmet and light: as a starter a ceviche, on a burger dish and for dessert a fruit salad. 

Marion Sauveur, the French gained an average of two and a half kilos during confinement. It's summer, soon it's time to put on your swimsuit to bask on the beach. You are offering us light but delicious dishes this morning. What do we have on the menu? 

A ceviche as a starter, a flat burger, and a fruit salad for dessert. A balanced, gourmet menu ... but not too fatty! 

We start with the starter and the ceviche, which is a Peruvian specialty: a salad of raw fish seasoned with lemon. And I chose the plaice (also called plaice), a flat fish with fine flesh, recognizable by its orange spots. It is a lean fish, with white flesh. 

For the ceviche, you need a very fresh fish. And the ideal is to detail the fillet into fairly thin strips (4 mm thick) and marinate this fish for an hour with lime, olive oil and chili. I really like the sweetness of the Espelette pepper, but you can choose a bird's eye pepper if you like the spiciness. 

When it is marinated, we put the fish in a dish with the minced red onion. We add strips of zucchini and pepper, small cubes of tomatoes, minced coriander. And we season with lime juice and olive oil before finishing with a small lime zest. 

For gluttony, you can serve this vegetable ceviche with toast, rubbed with garlic. And even make sandwiches, with a small fresh cheese and your ceviche on top. 

On the flat, you offer us a burger. Won't it be light?

Yes, since we will also be using mass summer vegetables there too! We will replace the bread with eggplant, making fairly thick slices of eggplant (2 per burger). Ideally, cook them on the barbecue or in the oven, brush them with olive oil and bake the eggplant slices for fifteen minutes (200 degrees). 

Then you just have to prepare your burger: by cutting tomato slices, preparing two lettuce leaves, and shaping the minced steak, before cooking it (2-3 minutes per side). 

And for cheese: cancoillotte, the lowest calorie French cheese! Barely 49 calories for a 30 gram serving. Ideal for keeping the line. 

Finally, to accompany this burger, small new potatoes (cut in 2-3) to bake in the oven, with a little olive oil and rosemary. With fleur de sel at the end of cooking, it's perfect.

And for dessert: a fruit salad. We are not really greedy. 

I have some surprises for you! For this summer fruit salad, mix peach slices (2 peaches), a diced melon, halved cherries (2 handfuls) and whole raspberries (150g). Add the juice of half a lime, green anise (a pinch), ground ginger (a pinch), cinnamon (a pinch) and sesame seeds. A little unrefined sugar if the fruit is a little too acidic. Let sit in the fridge for an hour.

And for the delicacy: make a homemade granola. We will sprinkle it on the fruit as if it were the crumble cookie. With oatmeal (300g), mixed with coarsely mixed almonds and hazelnuts (150g), maple syrup (4 tablespoons or honey / agave syrup) and a little hazelnut oil (2 tablespoons). And hop: in the oven at 150 degrees for 20 minutes (stir after 10 minutes).

All you have to do is add it over the fruit, with crumbled dark chocolate for lovers. And that makes us a gourmet dessert, with taste and season!
