When buying food in the market, check that the merchant follows the five key points of WHO food safety

  keep clean

  "Wash your hands before and after meals" We have known since childhood. In addition, we should wash our hands before and during cooking, especially during the cross-processing of raw and cooked foods or after receiving calls.

  Pay attention to keeping the kitchen hygienic and clean, such as tableware, chopstick cages, knives and chopping boards, especially rags, should be cleaned and disinfected frequently, and should not become a source of pollution in the kitchen.

  Raw and cooked separately

  "Raw" here refers to raw materials that need to be heat-treated, such as raw meat and raw seafood. "Cooked" is directly imported food.

  Separation of raw and cooked food is to prevent pathogenic bacteria carried on raw food from contaminating directly imported food and causing foodborne illness. Special attention should be paid to the processing of raw and cooked food appliances, such as knives, cutting boards, etc.

  Cooked through

  The general principle of simmering is to keep it for 10-15 minutes after opening the pan. If it is a large piece of meat, such as whole chicken, the time is longer.

  When eating snails, shells, crabs and other aquatic products, it is not safe to eat raw, half-life, wine, vinegar or salted food directly, especially pregnant women, children, the elderly and other people with low immunity Raw food diet.

  Store food at a safe temperature

  Most microorganisms like room temperature environment, it is difficult to survive above 70℃ or below 4℃. In summer, the cooked food should not be stored at room temperature for more than 2 hours, let the food cool and store in the refrigerator.

  But the refrigerator is not a safe. Some psychrotrophic bacteria such as Listeria monocytogenes and Yersinia enterocolitica can grow, so the food taken out of the refrigerator should be heated or washed thoroughly before consumption.

  Use safe water and food ingredients

  To buy food in regular supermarkets or markets, pay attention to food label content such as production date, shelf life, storage conditions and so on.

  Do not eat foods beyond the shelf life, if the canned food packaging bulges or deforms, it will not be eaten.

After buying food from the market

  Wash your hands with water and soap before handling food.

  Wash fruits and vegetables with water before eating.

  Refrigerate all perishable foods (below 5°C) as soon as possible.
