La Casa de Manolo Franco, one of the reference haute cuisine restaurants in the Sierra de Madrid, has paid tribute this Friday to the health workers of various Madrid hospitals by inviting them to their first service and a menu, 'A tu lado', dedicated to them.

"It was clear that this first service was going to be dedicated to them, to those who have risked their lives for us, those who have worked so hard, all these people to whom we owe so much," explains Manu, chef and owner of the premises, now converted with only seven tables, almost three meters apart and disinfected with ozone the day before, and which has had its first filled with nurses, doctors, Civil Protection operators from Valdemorillo ...

The invitation has served as a tribute to his work. The toilets were the first to taste 'A tu lado', a menu with more than eleven dishes with some specialties of a gastronomy always focused on the product and the terrain such as an old cow's tail with mushroom, potato soufflé, rosemary ...

The toilets, mostly women, came from the Puerta de Hierro hospital, the El Escorial hospital, the Mozalzalzal health centers, Guadarrama ... and after the desserts, while taking a petit de mascarpone, white chocolate and raspberry , tell stories. "The most beautiful thing was to feel that you were the thread that many people were holding, they brought me drawings that their daughters had made for them , they asked us for the phone to be able to talk to their relatives, it was something incredible in some way," explained Miriam.

"I was very impressed by the fact that they couldn't be happy because that could kill them. A lady knew she had been a grandmother and when she found out she started crying and I had to beg her not to cry because it was saturating, with the emotion she ran out of oxygen and you couldn't afford that. Don't cry, please, I said, it was shocking, "explains Carmen.

"There were very, very hard times, because the hospital was not our hospital, it was all from Covid and we had very bad nightmares, but the next day we had to go to work, we were clear that we had to all be united to win this battle", says Elena, a worker at the Puerta de Hierro.

"They deserve it, we will never forget what they did and also that our first service was for them, they will fill us with courage," says the chef, who was a Formula 1 journalist for many years.
