The skin of vegetables, a concentrate of vitamins and minerals

To cook antigaspi is first to think in the long term. How? 'Or' What ? By cooking vegetables from head to toe, for example with two different recipes from the same product. If you don't want to eat the second recipe right away, just put it in a well-conditioned jar and enjoy it later.

Another tip: invest in a vegetable brush, which has two advantages. First, you no longer throw away your peelings: all you have to do is wash the vegetables - organic, so that the skin does not contain any harmful products - then brush them to consume them. And nutritionally, it's much better: the skin is a concentrate of vitamins and minerals!

Recipe ideas (to reinvent!)

What if you don't know what to do with the parts of the products you are not used to cooking? Our chefs offer recipe ideas to get started with the concept, for example potato skin crisps, syrup made from strawberry tails, or a mince pie to finish off the leftover meat: find all their dishes here.

For the rest, it's up to you to be creative: it's by testing that we sometimes make the best recipes ... or simply, by using common sense. Like for example by making your vinaigrette directly in an almost empty pot of mustard, so as not to lose any.
