"Full fingers": Socca, the star of Nice (gluten-free) with chickpeas and olive oil - 20 Minutes

Italian and borrowed from the “farinata” or purely from the Côte d'Azur, the socca has been the pride of Nice and has delighted the people of Nice for centuries. This fine patty of chickpea flour, traditionally baked in a wood oven in a generously oiled copper dish - with olive oil please - is gluten free and packed with protein (22 g in 100 g of flour).
In the French Riviera capital, socca is served in particular in Old Nice, but also in the port district. At Chez Pipo restaurant, an institution founded in 1923, it is displayed on the storefront and represents the best sale. It can be eaten on the spot or to take away and we recommend it very peppery. The share is offered at 2.90 euros.
