It has long been unclear what caused the food poisoning at the Balder Gymnasium, but after sending samples to a lab in the UK, the municipality has now received an answer. It turns out that the culprit in drama was lectins, a bean protein found in a mince stew served at school.

The increased levels of leek were due to the fact that the beans were not cooked enough.

- It is positive that we have received a clear answer, which is unusual in food poisoning in general. It is also, as we know, the first time that elevated levels of lectin have been shown to be a cause of food poisoning specifically in Sweden, says Sandra Wallström, food inspector at Skellefteå municipality.

In total, about 280 people belonged to the municipality with food poisoning symptoms in connection with the incident.
