- It stormed quite a few years ago, but we stood up. This is what we believe in and that we must do for the sake of climate and health, says Lena Sjöqvist, head of kitchen at Tullängsgymnasiet.

More green - whether popular or not

Instead of going back, the school restaurant provided a large kitchen island with room for extra vegetables. Like all schools in the municipality, the school is working towards a political goal of reducing the climate-impacting emissions from food. Then meat becomes natural to reduce whether it is popular or not.

- We try to attract here is to find plant-based meals where we get flavors and roasting surfaces that are reminiscent of the meat, says Lena Sjöqvist.

"A little sick sometimes"

Anyone who is skeptical, or curious, in the food queue can always taste the food before with a spoon. And although it is sometimes grumbled that there is too little meat on the menu at the Customs School, there is also understanding among the students we talk to.

- It's a little tough sometimes, that it should be so much vegetarian. I understand that they think about the environment and so on, but we have to get some protein, ”says Fouad Alarbaji, who is in his second year at school.

Isn't protein in beans?

- Yes, but you get tired of it after a while.

- There is a lot that is mixed up and new and it can be monotonous ... but many times it can also be good, says Viktor Davidsson.

- We received complaints ten years ago when we left semi-finished products and started to cook from scratch. The students thought it was strange then. Everyone does not like all food all day, but I think it is so at home too. In any case, it was so in my family, says Lena Sjöqvist.
