The ingredients for a quiche:
— 200g shortcrust dough (250g flour, 125g butter, salt)
— 500g fresh salmon fillet
— 1 handful of fresh sorrel
— 2 shallots
— 3 eggs
— 20cl of heavy cream
— Salt and pepper

Brothers Jean and Pierre Troisgros revolutionized French cuisine with their innovative approach, creating "nouvelle cuisine" in the 1950s.
