The ingredients for a quiche:

— 200g shortcrust dough (250g flour, 125g butter, salt)

— 500g fresh salmon fillet

— 1 handful of fresh sorrel

— 2 shallots

— 3 eggs

— 20cl of heavy cream

— Salt and pepper

Brothers Jean and Pierre Troisgros revolutionized French cuisine with their innovative approach, creating "nouvelle cuisine" in the 1950s. They were the first to receive three Michelin stars outside Paris.
