Recipe:

  • 2 kg of rabbit leg
  • 2 carrots
  • 2 stalks of celery
  • 2 onions
  • 1 liter of white wine
  • 700 ml apple cider vinegar
  • 500 of water
  • 300 ml olive oil
  • Thyme
  • Rosemary
  • 4 pieces of garlic
  • 10 black pepper seeds
  • 5 g fennel seeds
  • Salt

Wash and cut the aromatic filling.

Color the thighs.

In another saucepan, sauté the filling and add the liquid mixture. Make a first boil and then pour everything into a plate with height. Cover and place in the oven for 2 hours at 140 ° C.

Once cooked, shred the thighs.

Reduce the cooking juices to half.

Rabbit can be served hot or warm.
