Sun-drying of this year's saury has begun in Onagawa-cho, Miyagi Prefecture, which has one of the largest saury catches in Japan.

Yamahon Bay Foods, a fishery processing company in Onagawa Town, started sun-drying this season's saury from the 11th.

Workers skewered approximately 6,500 frozen saury marinated in salt sauce and hung them over the tower.

By exposing them to sunlight and dry wind to blow away the moisture, the saury's flavor is condensed.

This season's Pacific saury at Onagawa Port is almost unchanged from last season, when the catch was the lowest ever, and the average price has increased by more than 3%.

Since the cost of materials such as cardboard and the cost of electricity are also rising, this company has raised the price of sun-dried products by about 10% this year, while dividing the price by size and selling them, making it easier for consumers to buy. I will try to devise it.

President Takeharu Yamamoto said, "It was difficult to secure raw materials. Landings have decreased and we have no choice but to raise prices, but we would like to think about sales methods so that the taste of Onagawa can reach many people."

Sun-drying of saury in Onagawa-cho will be done until around the end of March, and it will be shipped to supermarkets nationwide.
