It has been seven years since this Alsatian based in Aspach-le-Bas (Haut-Rhin) launched his company, Minérasève, specializing in the field.

He harvests “from early March to mid-April” the precious liquid and resells it.

Either fresh or fermented.

“It eliminates toxins, thick fats, it decongests the liver, it reduces uric acid in the kidneys.

All while conducting scientific studies on its products, certified organic (AB).


“Originally, I called the National Forestry Office to find out if I had the right to take sap from a plot.

And instead, they offered it to me.

In the evening, I came home and told my wife that I was going to become a harvester”, recounts Jérémie Kubler.

Since then, he harvests each year with seasonal workers "from early March to mid-April", "15 to 20,000 liters of sap from 700 to 800 trees".

“This corresponds to 1 to 3 liters per birch for twenty days, knowing that a tree can produce up to 200 liters daily.

It's as if we were taking a blood test from them, ”he insists.

One drink a day, twenty mornings in a row

For the three annual detox cures recommended by the specialist (at each change of season except after summer), he recommends "15 centilitres, or one glass a day for twenty days, to be taken on an empty stomach in the morning".

This is why his product is often packaged in a 3-litre bag sold for 34 to 45 euros.

Sometimes even special flavors, such as ginger-lemon scented.


But by the way, what does this sap taste like?

“Fresh has none.

The one that I ferment for three months at low temperature, it's close to kefir, it's a little tangy, lemony, "replies the Alsatian, who even sells his" well-being drink "to horse owners. .

Otherwise, it can be found on order on its website and in organic product stores.

"And I'm starting to arrive in pharmacies," says Jérémie Kubler, again emphasizing the benefits of his product.

“The intestinal flora is like our second brain.
