For some time now, the Madrid gastronomic scene has been on everyone's lips.

The openings follow one another at a frenetic pace, established chefs coexist with

millennial

chefs , classic proposals maintain a loyal following, while snacks from half the world gain ground on the table... Michelin-starred restaurants have also become a whole claim to enjoy and savor the capital.

Here is a tour with some of the most appetizing suggestions.

NEWS

This 2022 has been loaded with openings.

The

Robuchon

group has landed in the historic Embassy venue (Paseo de la Castellana, 12) with three spaces (L'Atelier, L'Ambassade, Le Speakeasy) and the class that has made the French house so famous.

Also for the first time they are at the Hotel Urban, where the young chefs Javier Sanz and Juan Sahuquillo have started their adventure, who have just been recognized with a Michelin star in the gastronomic restaurant they have in Casas Ibáñez, their town of Albacete.

This tandem has taken the reins of

Cebo

, with a kitchen that stands out for its excellent seasonal ingredients, the grill and its simplicity.

Japanese cuisine has added interesting proposals throughout this year.

Ugo Chan

restaurant (Félix Boix, 6), with Hugo Muñoz (44) in charge of the kitchen, has carved out a loyal clientele and a Michelin star in just a few months.

A risky proposal where tripe gyoza, fried eggs with Japanese migas al pastor or cod tempura with roasted pepper dashi stand out.

(Pensamiento, 28) -with its typical sushi bar and its first red star already under its arm- and

(Velázquez, 136), by chef Yong Wu Nagahira, make up that high-class list of those worth a visit .

The Basque chef Eneko Atxa has landed at the Radisson Red Hotel with

(Atocha, 123), a restaurant that will offer a tasting menu -and his personal vision of Japanese cuisine- for 69 euros.

, a new venue in the Salamanca neighborhood with a careful and honest proposal.

The canteens that have witnessed the history of Madrid have endured the ups and downs that have shaken the sector in recent times.

Going to

Lhardy

(Carrera de San Jerónimo, 8) continues to be quite an experience that has managed to maintain the essence of the space founded in 1839. Also endorsed by Pescaderías Coruñesas in this new stage, iconic dishes such as canetón duck have remained on the menu from the Landes roasted with orange (centennial recipe of the place) and the Wellington sirloin with English potatoes.

Another of the most traditional houses in the capital is

Located in front of the Retiro Park, this temple of good food stands out for its seasonal fish menu: the grilled wild turbot and the sole and red shrimp ragout are two authentic jewels.

The Ibiza area has a good handful of places to stop and eat before or after taking a walk through El Retiro.

The truth is that in any neighborhood of the capital there are some of the most tempting options.

The La Ancha group, another Madrid classic, has venues of different styles in various parts of the city.

From the Plaza de Cataluña, headquarters of

with a more modern and casual proposal, has become a meeting point in the area.

The Omar

is the new gastronomic project that bears the stamp of Nino Redruello and Patxi Zumarraga, high-altitude cuisine and bakery in the newly opened Hotel Thompson Madrid.

Also in the Plaza de Cataluña area, you can have a snack at the high tables of

Marzeah Taberna

(Príncipe de Vergara, 202), with a traveling and hooligan menu designed by Sergio Guijarro.

A few meters away, the recently inaugurated

Casa Neutrale

(Plaza de Cataluña, 2), with a selection of very rich toasts that solve just as much a breakfast as a fast meal.

On weekends the tables on the terrace are in high demand.

Boccondivino

(Poeta Joan Maragall 19), a reference in the capital until it closed in 2011, has reopened its doors in style.

His philosophy: a pan-Italian menu with a product focus, prepared with care and a lot of patience.

(Recoletos, 6), chef Gianni Pinto's house, modern and author Italian cuisine is served.

Far from posturing and impossible combinations, here the pasta is made with a head and the best product.

Not far away is another great Italian from the city,
