Each one represents heaven on Earth in its own way.
One, through a crispy crab omelet.
The other, thanks to his

From him.
From the streets of Bangkok or from those of Singapore.
We are talking about two street food stalls that have already become meccas for gourmet travelers:
Jay Fai
and
Hill Street Tai Hwa Pork Noodle.
They are the only ones of their kind with a Michelin star, this year renewed.
What's more, despite the simplicity of their establishments, these chefs enjoy a certain rock star status, with legions of
groupies
willing to queue hours before they even open.
It was in 2016 that Hill Street Tai Hwa Pork Noodle received its star.
He has held her ever since.
If there is a dish that represents Singapore, it is
Bak Chor Mee
and, for many, there is no better dish of pork
noodles
than the one eaten at this stall located in one of the typical street food markets that populate the Asian country.
Markets or
hawkers
that, on the other hand, you have to know yes or yes because they are an essential part of the cultural and gastronomic identity of Singapore.
So much so that the
hawkers
were named Intangible Heritage of Humanity by Unesco last year.
Hill Street Tai Hwa Pork Noodle is one of the oldest noodle stalls in the city.

Its origin dates back to 1932 when the current owner's father opened a modest stall on Hill Street.
Today, for the cheapest Michelin-starred meal on the planet, you have to go to Crawford Lane and wait anywhere from 45 minutes to two hours in line.
Each plate of
Bak Chor Mee
cost about 6 Singapore dollars (about 4 euros).
Like Hill Street Tai Hwa, Jay Fai's location this time in the heart of the Thai capital was well known to
foodies
before it was awarded a Michelin star in 2018. Then, Supinya Junsuta, better known as Jay Fai, had 72 years old and little interest in haute cuisine recognition.
She hadn't even heard of Michelin stars.
"Didn't Michelin's sell wheels?" she said when she received the invitation to attend the delivery ceremony for hers.
By then she had already been working 12 hours a day, six days a week in front of the kitchen in her restaurant for decades.

Such is the heat there that instead of putting on a chef's jacket, the cook usually dons a black apron,
hat, and ski goggles
.
Today she is a legend: the queen of street food.
That is why her presence in one of Netflix's
gastro
series could not be missing and that last year she received the honorary award of Asia's 50 Best Restaurants.
To eat their celebrated
khai jeaw poo (crab omelette), their
tom yum
soup
and
drunken noodles
, you have to get into the Rattanakosin neighborhood, the Old City of Bangkok.
