VEGAN Greenhouse Vegan District, a 100% 'plant based' restaurant
FLAX & KALE Teresa Carles, the queen of flexitarian cuisine, arrives in Madrid
A
breakfast
that invites the diner to get closer to the
purest nature
.
A
cheerful meal
with local products that respect the environment.
And a
dinner
where you can
share a table with vegans
surrounded by color and good vibes.
Three places with a special aura to disconnect on these days of rest with family and friends without having to
sin
excessively.
Take note of these suggestions designed for well-being.
ALTERED BY WE CRAVE
They bet on specialty coffee from Nomad Coffee and have high-quality espresso machines.EM
Madrid is full of charming specialty cafeterias where you want to stay.
But the interesting concept of Altered, at number 12
Conde de Xiquena street,
draws attention from the door.
One seems to be entering an art gallery that, however, is a minimalist Nordic-style venue presided over by a large bar with La Marzocco espresso machines, among the best on the market, and with a commitment to Nomad Coffee coffees.
Here
you will not find the typical avocado toast
with feta cheese that they make in all places.
Behind this interesting project is the
food design
studio We Crave, which began by revolutionizing the capital with its clandestine dinners.
So the breakfast and
brunch
menu has a surprising touch, with options such as toast with Macadamia cream with radish and watermelon, wild mushrooms and Cebreiro cheese with acorn-fed honey or organic butter from Cantabria.
The bowls are just as appealing, with Gröd (Danish oats) and loaded with other nutrients, thanks to the fruit and nuts.
In addition, they have workshop options, with their Estella croissant, Date and Oregon cookie or Alter Cookies.
Honesty, spirit and excellence are the values of this minimalist venue.EM
"Although many people ask us for the poached egg and we do it if they want, we
pretend to be different
. We have worked a lot on the concept with the chef of Sala de Despiece and many people stay at the door curious to see what it is," says Vanessa Redondo , creator of gastronomic experiences and at the controls of Altered.
"In coffee, the barista is essential," adds the entrepreneur under the slogan 'pure ingredients sensitively transformed', hence the name Altered.
SANISSIMO
Sanissimo's 'leitmotiv' is to create dishes that work in perfect symmetry with our health and the environment.EM
These days when we all gather in the center of the capital to see the
Christmas lights,
it is worth discovering options beyond the typical fast food chains that invade big cities.
In addition to the mythical Honest Greens, in three different addresses and very well located (Opera, Gran Vía and Príncipe Pío) is Sanissimo.
A proposal that "is born from the dream of creating dishes that work in perfect symmetry with our
health and that respect our environment
", says Sonny Montero, head of the business.
Black focaccia made with charcoal, one of the original dishes on the menu.EM
When he devised the first restaurant based on his own
diet without animal protein,
he did so because he could not find too many options "to be able to eat well, at a good price and according to his dietary preferences."
Montero stopped eating meat after a trip to India where he discovered a town where its inhabitants did not eat it and boasted of longevity.
On his return to Madrid he searched, but could not find anything that met his
expectations of innovation, respect for the environment and flavor.
This is how he shaped his dream: "Feeding more people without animal cruelty, in a healthier and more conscious way," he says.
Each of the three premises are simple but designed with a lot of charm and care.EM
Although being vegan or avoiding animal protein is not synonymous with being healthier and each person is free to take their own path in their diet, the best thing is that it has
managed to make omnivores fall in love
, says Montero.
Bagels
and
juices marked their beginnings and continue to play a leading role.
The ingredients of his dishes "are national as far as possible -with the exception of some more exotic ones-, from small producers or artisans".
Soups of the day, colorful hummus, a black focaccia that he cooks over charcoal, abundant salads or a timbale of lentils with a quinoa base and
dried tomato
topping .
All this, surrounded by hand-painted murals by the artist Kacper Janulewicz, which transport you to a magical world.
LONG LIVE BURGER
The colorful premises of Viva Burger, a vegan restaurant in La Latina.EM
This colorful burger joint located in La Latina debuts the vegan Smash Burger, for those who want to meet
friends who eat 100% vegetables
or treat themselves to a less guilty treat with the overflowing trendy burger.
"Our
meats
are obtained from seasonal vegetables, finely chopped and pressed, so that it does not end up like a paste, but juicy, vegan super melted smoked cheese and our new and delicious vegetable bacon based on mushrooms and olive oil. The bread is of brioche and all artisans", says Magdalena Madariaga, known as Mada and a
pioneer in veganism
in Madrid.
Entrepreneur Magdalena Madariaga, a pioneer in veganism, poses smiling in her store.EM
When he opened his first vegan restaurant, Treasure Island, there were barely five, he recalls.
"Now you have over 100 options."
After several business adventures, and even living abroad, the entrepreneur saw a
trend in the gourmet hamburger
and wanted to give options to those who do not want to eat meat for different reasons, ethical, animalistic, to take care of the planet... but who could share a table with the rest of the diners without them noticing big differences.
"They don't have to be boring dishes. Now there is a freer way to be a vegan, in which nobody imposes you, there is simply a greater planetary awareness."
She is
in love with yoga and Pilates,
who has researched and studied a lot about nutrition, combines her dishes with natural juices or kombuchas, in line with the 'buenrollista' philosophy of the place.
"In 2010 I went bankrupt and I have here the signs of my old stores. The name is also a tribute to that Viva la vida," Mada slides with the same renewed desire and eternal smile.
Now Viva Burger brings
vegans and non-vegans
together in La Latina
.
"Some customers leave, in fact, not knowing that you are a vegan."
His new proposal, the overflowing Smash Burger and 100% plant based.
It has two vegetable meats, cheese and vegan bacon.EM
