When he devised the first restaurant based on his own

diet without animal protein,

he did so because he could not find too many options "to be able to eat well, at a good price and according to his dietary preferences."

Montero stopped eating meat after a trip to India where he discovered a town where its inhabitants did not eat it and boasted of longevity.

On his return to Madrid he searched, but could not find anything that met his

expectations of innovation, respect for the environment and flavor.

This is how he shaped his dream: "Feeding more people without animal cruelty, in a healthier and more conscious way," he says.

"They don't have to be boring dishes. Now there is a freer way to be a vegan, in which nobody imposes you, there is simply a greater planetary awareness."

in love with yoga and Pilates,

who has researched and studied a lot about nutrition, combines her dishes with natural juices or kombuchas, in line with the 'buenrollista' philosophy of the place.

"In 2010 I went bankrupt and I have here the signs of my old stores. The name is also a tribute to that Viva la vida," Mada slides with the same renewed desire and eternal smile.
