Harvesting red turnips, a winter delicacy in the Hida region, is at its peak in Takayama City, Gifu Prefecture.

In Takayama City, the cultivation of red turnips, which are characterized by their vivid reddish-purple skin, is thriving.

At Yoshiyuki Hirano's farm in Nyukawa-cho, Takayama City, he cultivates red turnips in a field of about 150 acres, and is at its peak harvest.

During the work, the red turnips that have grown to a diameter of 5 to 18 centimeters and can be seen outside the soil are selected and pulled out. After that, the roots and leaves are cut off with a kitchen knife and placed in a basket so that they can be easily processed into pickles. I was.

The red turnips are slightly smaller than usual, partly because of the relatively high temperature this fall, but they are well colored and perfect for pickles. That's it.

Mr. Hirano said, "It's popular for its traditional, rustic flavor made with salt, mirin, and sugar. Consumption of pickles is declining, but I want everyone to try them."

The harvest of red turnips will continue until the end of this month.
