Among them, "Mountain Family Clearance" written by Lin Hong, a gourmet from the Southern Song Dynasty, is known as one of the earliest recipes in Chinese history, including royal banquets, scholar-official diets, market diets, and health diets.   [Explanation] It is understood that 8 of the 16 dishes in the "Haisi Banquet of Song and Yuan Dynasties" were selected and refined according to the records of "Shanjia Qing Offering", which combined the characteristics of the food culture of the Song Dynasty and the ingredients, condiments and regional characteristics of southern Fujian. To this end, the expert group reviewed a large number of Chinese food culture history, Song and Yuan Dynasty food culture history, southern Fujian and Shishi local food culture materials, and conducted rigorous textual research and field research.

  There are a total of 104 records of some dishes in the Song Dynasty in the entire "Shanjia Qingyi".

Then these dishes are themselves, they belong to a category of our Fujian cuisine, and they are of great help to the improvement of our Fujian cuisine and the improvement of our Fujian cuisine.
