In a family workshop of handmade bean flour cakes, the noodles are crushed and milled, mixed into balls, coated with oil and rolled out... Zhang Runming is making bean cakes by hand with the women in the village.

  Daixian Bean Noodle Cake is a local specialty multigrain baked pasta. It is made by hand with traditional recipes. It is one of the typical representatives of Yanmen food culture.

In October 2019, the Xinzhou Municipal People's Government announced the "Dai County Bean Noodle Making Technique" as a municipal intangible cultural heritage, and Zhang Runming is the inheritor of this technique.

  My father used to make pancakes in Dai County. I started learning from my father at the age of 37. Now I have been doing it for more than 20 years, mainly producing bean flour pancakes.

Because bean noodles do not contain sugar, it is the first choice for people with high sugar and diabetes.

  [Explanation] Zhang Runming produced freshly squeezed pure sesame oil on the basis of inheriting the shortcake making skills of his father, and restored the ancient pressing method.

  The bean noodles are planted in the mountainous area of ​​(Dai County), as well as Inner Mongolia (planted).

The oil used is the old-fashioned pressed flax oil produced by ourselves, which is linseed oil.

The main feature of the oil is the low temperature physical pressing of flax oil, which does not damage the nutrients of flax seeds and is nutritious and healthy.

  [Explanation] The bean cakes made by Zhang Runming can be purchased online in addition to being sold locally.

While strengthening inheritance and protection, Zhang Runming also led other villagers to increase their incomes.

  I can make more than 20 bags of noodles every day and earn 1,000 yuan in income.

In the past, the small shop my father opened in the county town mainly produced bean noodles and cakes, and now it has been passed down to me.

Not only does my son cook Chinese dim sum, but now he also cooks western pastries.

Employ 35 women around the village.

They get off work from 8:00 am to 6:00 pm every day. Their monthly salary is 2,800 yuan, and their annual net income is more than 30,000 yuan.

  [Explanation] With the expansion of the market, it is far from enough to make cakes by hand alone to meet the market demand.

In March this year, Zhang Runming expanded the production workshop, which is expected to provide more than 50 jobs.

  While making bean flour cakes, Zhang Runming visited old artists, collected relevant materials, and compiled a set of "Dai County Traditional Skills Cake Recipes" in combination with other traditional foods such as cakes in Dai County.

  Now there are not only bean flour cakes, but also Daixian traditional snacks, sugar triangles, Guokui, brown sugar cakes, a total of more than 20 products.
