The Christmas meal is fast approaching and you are about to enjoy a good log for dessert.

There are, however, many other alternatives to this traditional cake, desserts that lend themselves perfectly to the game for the holidays.

Régis Ferey, former pastry chef of the Presidency of the French Republic, gives some ideas in "Europe Midi".

With the Christmas meal, the traditional log is back on the tables to offer a good tasting moment for young and old alike.

And if each year the cake always has the same shape, there are nevertheless other alternatives to renew itself, while continuing to feast.

Shapes of shoes, trees ...

"Today, pastry chefs are extending their know-how on format, tastes and flavors", explains Régis Ferey at the microphone of Romain Desarbres. If the log, big star of the holidays, remains suitable for this meeting, "we can now deviate", adds the pastry chef. "We can play with products that are a little icy, refreshing, to alternate".

And the one who is also a trainer at the Ferrandi school in Rennes to evoke some original formats.

“We have shapes for shoes, trees, etc. Pastry has really become a design,” he emphasizes.

As a good ice cream lover, the chef insists that there are "very high quality ice cream parlors. We even see farms starting to make good quality frozen products. For Christmas dessert, a very nice ice cream. 'an original form can really be very interesting ".

A range of flavor choices for frozen desserts

Still in this perspective of a "refreshing" dessert, Régis Ferey recommends "the hazelnut ice cream with lemon marmalade, the alliance goes very well", he says, before continuing.

"After, a very good chocolate ice cream with tangerine, or other citrus fruits. Even vanilla with a mango and lime compote. All this allows us to have something very fresh and very pleasing", promises the pastry chef.
