Using 150 kilograms of chocolate, French chef Stéphane Leroux presented a sculpture that simulates the engineering construction of the Museum of the Future, relying on 90 kilograms of chocolate to build the base, and approximately 60 kilograms to form the shape of the building.

He presented this sculpture at the celebration organized by the Embassy of Belgium at the Raffles Hotel in Dubai, which aims to promote the values of sustainability and environmental protection in the chocolate industry.

Chef Stephane Leroux told «Emirates Today»: "I initially went to see the museum and the shape of the building from the outside, and then I began to put the measurements by which the sculpture can be designed, and the base was built from 90 kilograms of dark chocolate, to get this color, while I chose to build the color Blue, to present a scene of the sky's reflection on the silver color of the building's structure. Lero added that he relied on the design of the sculpture and Arabic letters through the papers, which he deliberately printed words on in order to obtain a form very close to the actual writing on the building, leaving himself the creative space that allows him to present the work with a special artistic vision.

The work on the sculpture took approximately four days, and the chef worked on presenting it with the help of a team in the stage of fixing the building on the base only. He noted that he refrained from presenting a sculpture with a replica of the real building in silver, as he preferred to use the blue color because he was not an engineer, and because he wanted to keep it at a distance from the real building. Lorou noted that blue is his signature color, explaining that he used chocolate that contains a lower percentage of chocolate butter, because the high percentage in chocolate carving affects the work, and leads to the melting of chocolate, and for this it must remain in low rates, which is one of the main challenges in Chocolate sculptures composition.

Returning to the event in which the sculpture was presented, it is mentioned that the UAE, according to reports and indicators of global competitiveness for 2020, leads the international scene in environmental sustainability among 8 global indicators related to environmental work, while occupying the first place regionally in 19 indicators.

Mohamed Hashwi, CEO of Pano Poratos Group, agent of the company "Blacklad", talked about the concept of sustainability in chocolate, and pointed out their quest to provide the best types of raw materials for industrialists, so that they can provide healthy products free of additives.

The director of production and training at the Pano Poratos Group, Sylvester Ono, reviewed the "Cocoa Tres" program, which aims to achieve sustainability in the chocolate industry and preserve the environment, as part of the company's commitments to its social and environmental responsibilities, in addition to financing the construction of schools, health care centers, wells and rain tanks in the producing countries. for cocoa.
