To celebrate its 40th anniversary, and with the help of the cook Sonia Ezgulian, the association highlights the people it helps by publishing their recipes.

Handicap International, along with other associations, received the Nobel Peace Prize in 1997 for its fight against anti-personnel mines.

Its action is international, the association is present in 67 countries around the world.

From emergency aid, to the granting of prostheses and wheelchairs, to training, to social integration and to education, the NGO's field of action is very wide.

Handicap International is now advocating for an end to the bombardment of respect and for respect for the Geneva Conventions and the treaties.

RECEIPTS

Stewed kid goat and honey pancake

Based on Keiro Hassan Yarow's recipe

For 6 persons :

For the kid's stew:

600 g of boneless kid meat, 4 cloves of garlic, 1 onion, 1 green pepper, 1 fresh pepper, 4 tomatoes, 2 potatoes, 4 sprigs of coriander, 1 drizzle of oil olive, salt, pepper

.

For the honey pancakes:

250 g of wheat flour, 40 cl of water, 1 tbsp.

tablespoon of honey, 2 pinches of salt, 2 tbsp.

tablespoon of oil

Start by preparing the pancake batter.

Gradually pour cold water over the flour while whisking constantly.

Stir in the honey and salt.

The dough is quite liquid.

Let it sit for an hour at room temperature.

You can flavor the dough with spices including freshly grated nutmeg.

To give your pancakes a lighter texture, replace half the water with lager.

In a sauté pan, with olive oil, sear the kid meat cut into small cubes.

Add the chopped onions, the chopped garlic, the green pepper simply incised.

Peel the potatoes and cut them into small cubes.

Scoop, seed and chop the tomatoes.

Incorporate these two ingredients into the previous mixture, season, pour over, cover, and simmer 45 minutes, stirring occasionally.

Lightly grease a non-stick pan with a little grapeseed oil.

You can use a brush for this operation.

Heat the pan and pour a little dough.

The pancake should be thick.

Let the pancake brown well before turning it over and baking the other side.

Prepare 5 more pancakes.

Serve them with a portion of stewed kid goat and a few sprigs of coriander.

Potatoes with spices, according to the recipe of Kabita Tahru

For 4 people :

Ingredients: 600 g of potatoes, 3 juicy yellow lemons, 3 cloves of garlic, 2 green peppers;

1 C.

golden sesame seed, 1 half tsp.

cumin seeds, 1 tsp.

teaspoon of turmeric;

5 sprigs of cilantro, 1 drizzle of sesame oil, 1 tbsp.

level coffee with coarse salt.

Squeeze the lemons, put the juice in a saucepan and bring to a boil.

On concentrating, the lemon juice will caramelize and become very dark.

Take off heat and let cool.

Brush the potatoes and cook them for 10 minutes in boiling salted water.

In a mortar, crush together the sesame seeds, cumin, a green pepper (remove the seeds if you want a moderate heat), the garlic and the coarse salt.

You get a very aromatic paste.

If you don't have mortar, chop everything finely with a slicing knife.

In a sauté pan, with sesame oil, very quickly brown the turmeric, the second pepper, add the spice paste and the caramelized lemon juice.

Incorporate the precooked potatoes and mix constantly for 2 minutes over high heat.

Remove from the heat, sprinkle with cilantro and enjoy Nepalese style with steamed buns.
