The “Sard” Café and Restaurant experience in the Saudi pavilion at Expo 2020 Dubai presents long stories about the secrets of authentic Arabic coffee and the etiquette of authentic Gulf hospitality.

She said that the Saudi coffee used in "Sard" is the best and most expensive coffee in the world, to be grown in the famous "Jazan" region, specifically in the "Umm Sahla" farm, as well as the considerations associated with the "roasting" process.

Concerning the types of Saudi Arabian coffee, Amira talked about their different tastes, which range from “light roast” and “medium” coffee to “dark” coffee, which is characteristic of the taste of the northern borders, while the coffee of the people of Hail is characterized by the flavor of cardamom, cloves and saffron. And Al-Jouf region coffee with cardamom flavor.

As for the coffee of the people of Tabuk, it is prepared with cloves and saffron, while the people of the central region prefer the flavor of roasted coffee in an intermediate manner, and the people of “Mecca” prefer the flavors of coffee with mastic, and the people of Medina tend to mix it with rose water, and the people of the eastern region prefer it with the flavor of cardamom and saffron.

Amira continues her talk about the tastes of coffee in the southern region, saying that the people of the Kingdom have multiple classifications of coffee flavors and additives, such as “Al Baha” coffee, to which cardamom, saffron, and “Nankha” are added, in addition to Asir coffee, cardamom, cloves, “lichen” and evaporated milk, and Najran coffee is limited to On ginger, Jizan combines ginger, fennel, cinnamon, cloves and cardamom.

Visitors to the “Sard” cafe and restaurant will enjoy tasting the distinctive Saudi dates, each of which is compatible with the coffee of each specific Saudi region.

Likewise, “Umm Kabar” dates are served with Najran coffee, “Red Sukari” with Jazan coffee, “Al-Khudari” with Asir coffee, “Umm Ali plant” with Al-Baha coffee, and “Saqqa’i” with Riyadh coffee, and “Al-Khalas” is served with oriental coffee, while “Ajwa” is served with Medina coffee, “Hashishi” with northern coffee, and “Majdool” with Hail coffee.

Saudi coffee is presented in paper packages that take into account the conditions of preserving the environment and the concepts of sustainability.

"Sard" offers a range of innovative Saudi dishes under the supervision of Saudi Chef Nora, who visited most regions of the Kingdom and was introduced to the most important dishes, integrating their diverse flavors in a unique way.

The chef also arranged and categorized them according to Saudi names, confirming the launch of “Luqamah” on the appetizer list, naming the list of salads as “Kehrbak Khidr”, and the list of the main dish as “room”.
