The trend is heavy, however. For several years, sales of cheese by the wooden box have been crumbling by 3% on average, despite changes in packaging. In the 1980s, "we produced 180,000 tonnes of Camembert in France, part of which was exported," recalls Fabrice Collier. In 2010, the French still consumed 55,000 tonnes, or about 3.5 Camemberts each over the year.

Opposite, mozzarella is attracting more and more people, with an average growth of 5% per year, and a peak of + 21.2% in 2020 according to France AgriMer.

The little white ball has a trump card up its sleeve: it cooks a lot, and easily with that.

Aperitifs, salads, pizza, you can do anything with Italian cheese, while Camembert is best served on a platter.

Enough to conquer the French, whose consumption patterns have evolved.

Even if the Camembert will always remain a symbol of the country of cheese.
